Fresh Creamy Tahini Buckwheat Noodles

Here's a vegan and gluten-free recipe that you can make in under fifteen minutes you might enjoy. It's a twist on a stir-fried noodle with a creamy tahini dressing on top. I call it "Fresh Creamy Tahini Buckwheat Noodles".
It's so quick, delicious and tasty, anyone can make this.
Fresh Creamy Tahini Buckwheat Noodles
Ingredients
1. Organic gluten-free buckwheat noodles - 8 ounces
2. Tomatoes - 2 medium-sized, chopped
3. Cucumber - 1 medium-sized, chopped
4. Fresh mushrooms - 1/2 cup, sliced
5. Green onions - 2 stems, finely chopped
6. Fresh Sage - 2 teaspoons, finely chopped
7. Onion - 1, medium-sized, chopped
8. Garlic - 3 cloves, minced
9. Tahini sauce - (olive oil, lemon, salt and pepper) Get the Foods for Gods Tahini Sauce to save time.

Directions
1. Meanwhile, cook the buckwheat noodles according to the instructions on the package. Once they're cooked, drain and rinse them with cold water to stop the cooking process, then set them aside.
2. Heat a tablespoon of oil in a large skillet over medium heat. Add the onion and sauté until it turns translucent. Add the garlic and continue to sauté until it becomes fragrant.
3. Add the fresh to the skillet, and sauté until they're cooked through and lightly browned.
Or: Add the ingredients from steps 1 to 3 and place in an air fryer for 10 minutes.
4. Toss the cooked buckwheat noodles into the skillet with the sautéed veggies. Stir everything together well so the noodles are fully incorporated and coated with the flavours of the veggies.
5. Then, drizzle the tahini sauce on the noodles with mushrooms, fresh cucumbers, and tomatoes.
6. Use fresh green onions, sage, or basil for additional flavour and garnish.
